Transforming a Kitchen Island into a High-Volume Cocktail Bar
For three consecutive Christmas parties, Smart Pension trusted Hoochin' to deliver the cocktail experience for their annual celebrations.
Each year, the brief remained the same: serve 1,500 premium cocktails over six hours for around 300 staff and clients, while working within the unique layout of their Marble Arch offices.
Rather than using our mobile cocktail bars, Smart Pension wanted to make use of the beautiful open kitchen island that formed the centrepiece of their event space.
We loved the idea—and designed the entire service around it.
The Brief
Using the kitchen island created a fantastic focal point for the event, but it also introduced challenges.
Unlike our mobile bars, the island had no integrated sinks, waste stations or bartender workspaces. Everything had to be built from scratch while preserving the clean, premium appearance of the venue.
The solution needed to be fast, practical and, above all, invisible to guests.
Designing the Bar
Every detail was planned before the event began.
Behind the scenes, we built discreet ice/wash stations beneath each bartender's position, giving every member of the team access to everything they needed without affecting the appearance of the bar.
From the guests' perspective, the setup looked clean, elegant and effortless.
To complement the venue, we dressed the island with Hoochin's signature bronze bar equipment, fresh planting and carefully considered styling, creating a cocktail bar that looked as though it had always belonged in the space.
Building for Speed
Serving 1,500 cocktails in six hours requires far more than talented bartenders—it requires systems.
Before guests arrived, we pre-batched every cocktail to ensure speed, consistency and a tidy workspace. Removing the need for traditional speed rails allowed us to keep the island uncluttered while dramatically increasing service efficiency.
We also designed the service itself.
Each bartender became responsible for producing one cocktail throughout the evening, allowing them to perfect every drink while maintaining exceptional speed and consistency.
Clear signage directed guests to the correct station for their chosen cocktail, reducing confusion and spreading demand evenly across the bar.
Meanwhile, two dedicated bar backs kept every station fully stocked, replenishing ingredients, clearing equipment and allowing bartenders to remain focused solely on serving guests.
To manage guest flow, we also implemented a token system, ensuring drinks could be served quickly and efficiently throughout the evening.
From behind the scenes, our event manager oversaw the entire operation, monitoring stock, coordinating the team and making adjustments whenever needed to keep service running seamlessly.
The Result
Over six hours, our team served more than 1,500 cocktails while maintaining the same presentation and quality from the first drink to the last.
Despite the incredible volume, service remained smooth throughout the evening, with guests moving efficiently between stations and enjoying beautifully presented cocktails without long waits.
The carefully planned workflow, specialist staffing and considered venue design allowed us to transform an ordinary kitchen island into a fully functioning high-volume cocktail bar.
